17. What are the temperature requirements for fresh fishery products?

Fishery Products shall be kept at temperatures “approaching that of melting ice” (Regulation (EC) 853/2004, Annex III, section VIII, Ch. VII), meaning in the area around 0C. However limited periods outside temperature control are permitted to accommodate the practicalities of handling during preparation, transport and handling provided that this do not result in a risk to human health. (Regulation (EC) 852/2004 Annex II, ch. IX).

18. Can we use ice from a sub-supplier if it is made from potable water?

Ice shall be made from potable or clean water and handled so it is protected from contamination during production, handling and transport. (Regulation (EC) 853/2004 Annex II, chapter VII).Ice shall be considered as food and external supply can take place only from operators where all production facilities and handling and transport practices complies with criteria in Regulation (EC) 852/2004 Annex II.

19. What are the EU requirements to sampling for testing of heavy metals in fishery products?

The sampling shall be planned so animals are grouped by size and each size group analyzed separately. If the products based on the biggest animals comply with criteria the whole consignment can be considered to comply. If not, the next size group shall be analyzed for same assessment.
